Custard and orange pancakes

Let me guess, you have a bottle of amasi/buttermilk and some custard in your fridge coz it’s scones season. But to be honest, every season is scone season though in winter they hit differently coz iweather iyavuma (the weather agrees) and who are we to say no. So spice up your breakfast with a delicious and different recipe that still uses those same ingredients that you have. Add some orange zesty for some zingy and also, to use up the oranges in this amazing custard and orange pancakes recipe.


What goes into these delicious custard and orange pancakes

Get all your ingredients out before starting and here is what you gonna need
Flour; The usual cake is great after all you are making cakes in a pan on a stovetop
Custard powder; I use the Moirs brand and have no complaints check out my custard recipe with it
Amasi; Use fresh amasi you probably thinking that amasi can’t go bad coz it’s already in a bad form, but old amasi will leave a bitter taste and ruin your pancakes
Baking powder and soda; Yes you need both, use fresh baking please also if you buy a refill pack make sure you store it in an airtight container for best results. And for a more detailed explanation of the difference between baking powder and soda please check out this banana bread post.
Orange; finely grate the peel for the zesty
Margarine
Eggs
Sugar
How to make this delicious custard and orange pancakes
Mix all the dry that’s flour sugar baking soda and powder as well as the zesty and whisk to mix. In another mix, the wet ingredients amasi, eggs, and margarine stir until well combined

Pour the wet ingredients into the dry ones and whisk to make a batter don’t overmix it

Pour a quarter cup of the mix into the pan and let cook until it bubbles on the top, flip and let cook on the other side for about 2 mins

Continue with the rest until done

Enjoy with any toppings you like and a cup of coffee or some ++

Custard and orange pancakes
Ingredients
- 2 cups flour
- 4 tbsp sugar
- 2 tsp baking powder
- ½ tsp baking soda
- ¼ cup custard powder
- ¼ grated oranges zesty
- 1¾ cups amasi/buttermilk
- 2 eggs
- 4 tbsp oil
Instructions
- In a large enough bowl add the flour,sugar, custard powder, orange zesty, baking powder and soda mix them well
- In another bowl mix the wet ingredients that's the amasi, eggs and oil mix them well also
- Pour the wet ingredients into the dry ones and mix until well combined but take care not to overmix.
- Heat a pan on low heat and pour a ¼ cup of the pancake batter and let cook until it bubbles
- Flip and cook the otherside for abou two mins. Continue with the rest until done
- Serve with maple syrup, cream or jam, whatever you like really
