Chicken Stew


A delicious chicken stew that not only fills your home with the most aromas but tastes as good as it looks. Try and enjoy this heartwarming and comforting stew.


What goes into this chicken stew recipe

Chicken; You can use bone-in, skin-on thighs, and drumsticks that won’t be overcooked after such a long cooking time.
Vegetables; Use your favorite vegetables but be mindful of their cooking times. So the ones that take long to cook you add the earlier and the quicker to cook like green beans you add them late. I went simple with just potatoes, carrots, and tomatoes.
Spices; I used Robertson chicken spice, paprika, black pepper, and mixed herbs
Tomato paste and flour; These are the thickeners and the tomato paste add a lovely colour
Water/chicken stock;
Oil
How to make chicken stew
Heat oil on high heat, meanwhile take half a teaspoon of salt and black pepper and rub on the chicken pieces. Brown the chicken pieces on both sides and set them aside.
In the same pot, you browned the chicken, (if the oil is too much discard some) and saute the onions until they are clear. Add the carrots, chopped tomatoes cook for about 5mins, and then add tomato paste, spices, and flour mix everything well.


Add back the browned chicken pieces and stir until everything is well mixed and the chicken is coated in spices.
Pour the chicken stock or water, close and bring to a boil for 45 mins on medium heat.


After 45 mins add the potatoes, lower the heat and let simmer for 45 more mins


Done. Enjoy with a side of rice and some coleslaw
Chicken Stew
Ingredients
- 4-6 pieces chicken
- 2 tbsp oil
- 3 tsp chicken spice
- 1 tsp black pepper
- 1½ tsp salt
- ¾ tsp paprika
- ¾ tsp mixed herbs
- 1 small onion
- 1 cup chopped tomatoes
- 3 small potatoes
- 2 tbsp tomato paste
- 1 tbsp flour
- 1-1½ cup water/chicken stock
Instructions
- Heat 2 tbsps of oil on high heat, meanwhile rub the chicken with ½ a tsp black pepper and ½ a teaspoon salt. Brown the chicken pieces on both sides for about 7 mins per side and set aside.
- After browning the onions in the same pot (remove some oil if its too much) saute the onions for about 5 mins, add the carrots and tomatoes and cook for about 5 mins.
- Add the chicken spice,paprika,black pepper, mixed herbs,salt tomato paste and flour and mix well.
- Add back the chicken pieces,stir to until they are coated in the spice mix. Pour the chicken stock/water. Stir,cover and lower heat to medium and let cook for 45 mins.
- After 45 mins, add the potatoes, lower the heat again and let simmer for another 45 mins.
- The stew is done, enjoy
