This baked rice and chicken is amazing, and it’s not just because there are fewer dishes to wash that’s just a mere advantage. It’s the deliciousness that will have you making this over and over again. Think perfectly cooked rice, cooked in chicken juices and peppers and hints garlic all locked in an oven, yumminess. When you finally open the oven, the amazing aroma alone will drive you insane. You simply have to try this for yourself.

Rice and chicken have always been a firm favourite of many homes, I remember back then it used to be for Christmas only and boy was it delicious and so special. Add that specialness to your everyday dinner with a delicious recipe. It is also great as a Sunday lunch with some fresh slaw or any other side.

What goes into baked rice and chicken.

Chicken; It’s best to use bone-in thighs and drumsticks that won’t overcook and will release some juicy oils that will make the dish even delicious compared to breasts or wings.

Rice; This recipe is for long grain parboiled rice that takes longer to cook compared to other kinds of rice eg jasmine.

Bell peppers; Personally I like my veggies crunch and I cut them so big so that they can maintain the shape and some crunchiness despite the longer cooking time. but you can cut them however you want.

How to make this delicious baked rice and chicken.

Preheat the oven at 220 degrees Celcius while you chop the vegetable and it’s always a good idea to have all your ingredients together to avoid forgetting to add something.

In a large enough baking dish, I use a 30 by 22cm dish, add the onions, peppers, garlic, and oil, and put it in the oven for about 15 mins or until it’s aromatic filling the house with amazing garlic and pepper aromas.

Take out the dish from the oven and add the rice, spice for rice and mix well.

Place the chicken pieces on top of the rice skin side up for the thighs

Pour the water or chicken stock if that’s what you are using and cover with foil. Carefully place in the oven and cook for about an hour and 10 mins or until the liquid is almost absorbed. You can check the liquid with a fork or better yet a chopstick if you have one, it won’t break the rice.

After the hour and 10 mins, remove the foil and let bake for 20 -25 mins until the chicken has browned and serve with a side of coleslaw.

For the chicken

  • 4-6 pieces chicken Thighs and or drumsticks with skin on
  • 2 tsp chicken spice
  • 2 tsp Six gun spice
  • ½ tsp paprika
  • ½ tsp black pepper
  • ½ tsp salt

For the rice

  • ½ red and green pepper chopped
  • 1 small onion chopped
  • ½ tsp crushed garlic
  • 2 tbsp oil
  • cup rice long grain
  • 2 tbsp spice for rice
  • cups water or chicken stock


  • Pre heat the oven at 220 degrees celcius
  • In a small bowl mix all the spices and generously rub on the chicken and set aside .
  • In a baking dish add the oil,chopped onions ,peppers and garlic and pop into the oven and cook for about 15 mins or until aromatic.
  • Take out the baking dish and add the rice and spice for rice, mix everything well.
  • Add the chicken pieces on top of the rice skin side up, pour the water or chicken stock cover with foil and bake for an hour an 10 minutes and the liquid is almost absorbed.
  • After the hour remove the foil and bake for another 20-25 mins and the chicken has nicely browned on top.
  • Serve.
